Pork Tacos

Looking for something light and refreshing that is also quick to make. Try this delicious Pork Taco recipe from Cook Yourself Thin a show on the foodnetwork.ca that I absolutely love, and even bought the recipe books.

Ingredients

 3/4 teaspoon salt
1 3/4 pound pork tenderloin, cut into 1/2-inch chunks
2 teaspoons chipotle chili powder
cooking spray
1 onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
8 corn tortillas
4 tbsp salsa
4 tbsp greek plain yogurt

Directions

1. Combine the pork, chili powder and 1/4 teaspoon salt and toss in the pork
2. Coat a skillet with cooking spray and set over medium heat add the pork and brown for approximately 5 minutes then transfer to a bowl
3. In the same skillet saute onion and peppers until tender then add pork and its juices
4.  Put salsa and greek yogurt on the tortilla and top with pork and vegetables
