Asian Inspired Quinoa

This quinoa dish is absolutely delicious! If you like quinoa and asian flavours, this is a treat for you. It is light, filling and tastes AMAZING – and yes it warrants capitals. I could eat this every day it’s so good. I wish I could take credit for the recipe however the original recipe is from Marilyn Smith’s cookbook The Vegetarian’s Complete Guide to Quinoa. Here is my version of the recipe – since twisting things up is my favourite.

Ingredients

1/2 each orange and yellow peppers chiopped
1 head of broccoli
1/4 cup choppd green onions
1 package medium-firm tofu
1/2 white onion chopped
2 tsp garlic chopped
2 tsp ginger chopped
2 tbsp olive oil
1 cup quinoa
2 cup water
4 tbsp Hoisin sauce
2 tbsp Sriracha sauce
1 tsp sesame oil

Directions

1. In a pot boil 2 cups water with 1 cup quinoa on medium high
2. While the quinoa is cooking, sautee up oil, garlic, ginger and onions on medium
3. Once onions are translucent (apx 3 minutes of cooking) add in broccoli and onions
4. Once quinoa is finished add in tofu and let quinoa sit
5. After 2 minutes add in quinoa
6. Pour dressing overtop of mixture and stir together
7. Plate up and enjoy withe green onions on top
